Why Does a Green Ring Appear Around Hard-Boiled Eggs?

If you’ve ever peeled a hard-boiled egg and noticed a green or gray ring around the yolk, don’t worry—you’re not alone. This common discoloration may look strange, but it’s completely harmless and easy to prevent once you know why it happens.

  • Green/gray ring on yolk is common in hard-boiled eggs

  • Cause: overcooking or high heat

  • Science: sulfur (egg whites) reacts with iron (yolk) → iron sulfide

  • Safety: harmless and safe to eat

  • Downside: texture may be dry or chalky

How to prevent it:

  • Use room-temperature eggs

  • Bring to a gentle boil, then remove from heat

  • Let sit 9–12 minutes (depending on size)

  • Cool immediately in an ice bath

  • Older eggs, steaming, pressure cooking, or hard water can intensify the color

  • Bottom line: it’s not spoilage—just too much heat 🥚
